The Casco Viejo is the old heart and soul of Panama City. It is boho-chic to the highest and it is literally in the middle of "being on the verge." In two years, these charming French Colonial streets (picture the French Quarter of New Orleans on the sea, married with the set from "Moulin Rouge") will be polished and different. Every other beautiful crumbling colonial facade is under renovation and boutique hotels, bars, restaurants and shops are springing up in them.
Di Vino Enoteca is a chic, cozy and cosmopolitan new wine and tapas bar that attracts the well heeled attractive Panamanians as well as ex-pats and visitors who nestle into couches in the ambient space illuminated by black and white films and candles. Plaza Bolivar is the place for an after dinner drink if you want to hang with the cool locals-- there are half a dozen sidewalk cafes all with different origins from French to Japanese to Spanish to Panamanian. We discovered the best place to watch the sun set was from the roof top bar of Tantalo, a brand spanking new boutique hotel that wasn't even officially open yet... We will be back to revel in the revitalization of the Casco!
This weekend, trick your palate into thinking you're in the tropics by whipping up a batch of Passion Fruit Mojitos! My new favorite cocktail.
Passion Fruit Mojitos recipe via Cocktail Guru
- 1 Spoon white sugar
- 2 Oz White Rum (Havana Club®)
- Hand full of Mint leaves
- Half of one lime cut into 3 wedges
- Splash of club soda
- 1 Oz Passion fruit puree or one fresh passion fruit contents
- 1.5 Oz Sweet and Sour Mix
- 8 Ice cubes or crushed ice
- Step 1: muddle the mint, limes and sugar, muddle until you actually smell the mint.
- Step 2: Add 2 Oz of Rum
- Step 3: Add the sweet and sour mix
- Step 4: Add 8 ice cubes
- Step 5: Shake it hard! 10 times at least
- Step 6: Strain into the glass full of crushed ice
- Step 7: Add 1 Oz of Passion Fruit puree on top
- Step 8: Top the drink with club soda and stir
- Step 9: Add 5 fresh new mint leaves and a lime wedge on top and serve it, your perfect mojito is ready to drink!
