A Simple, Summer Recipe For Entertaining Large Groups...

Simple summer recipeThe final weeks of summer are upon us, and with that comes dinners with large groups of friends.  One of the easiest, time efficient, crowd pleasing recipes we've discovered is a tomato, brie, and basil pasta that can be served hot or cold.

 

 

Ingredients:

4 large ripe tomatoes

Lots of Basil

Small wheel of brie

Olive Oil

Salt

Pepper

Angel Hair (or penne if it will be served at a beach party or picnic)

***based on the number of people you will be serving, adjust ingredients.  Also feel free to add in cherry tomatoes, garlic whatever inspires you...

Directions:

Wash and chop tomatoes, brie and basil.  Marinate in a large bowl with olive oil and salt and pepper.  You can let it sit for hours covered in the refrigerator.  When ready, boil water, cook pasta, drain and then mix it all together. It's perfect for summer when you want to be out and about and not cooking for hours.  I like to chop everything first thing in the morning and then let it marinate all day when I'm running around.  Serve hot or let it cool and serve it as a delightful pasta salad.
