Happy Halloween part 2!! Another pumpkin inspired recipe and scary movies

We are thrilled to be able to share with you all yet another delicious pumpkin inspired recipe from another talented actor friend!  Jim Rash's Pumpkin Ginger Cupcakes cause quite a commotion this time of year....  Bake a batch to have for dessert tonight while snuggled up watching scary movies.

Rash's Pumpkin Ginger Cupcakes (With Cream Cheese Frosting)
CUPCAKES
1 1/2 cups of unbleached all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/4 salt
1 stick unsalted butter, melted and cooled slightly (1/2 cup)
1 cup sugar
1 cup of canned pumpkin (not the pie filling)
3 large eggs
1/4 cup diced up crystallized ginger
FROSTING
1 stick of unsalted butter - room temp
6 ounces cream cheese - room temp
3 cups of powdered sugar
1 teaspoon vanilla extract
PREHEAT oven to 325, rack in the middle.
CUPCAKES:
Place flour, baking soda, baking powder, salt, cinnamon and ginger into a bowl and set aside.
With electric mixer on low speed, beat the melted butter, sugar, and pumpkin until smooth. Mix in eggs and crystallized ginger.  Then, mix in flour.  The batter will get thick.
Fill each paper liner with generous amount.  Bake about 25 minutes (until the top is firm and a toothpick inserted comes out clean.)
Cool for 10 minutes in pan, then remove from pan and cool completely.
FROSTING:
WIth electric mixer on low speed,  beat the butter, cream cheese, and vanilla until smooth.  Then, add powdered sugar until smooth.  Then, up the speed to medium to lighten the frosting a bit.
Once the cupcakes are frosted, I sprinkle more crystallized ginger on the top for extra spice.  Word.
